Garden egg and pregnancy - It is also rich in folic acid, vitamin B,C, magnesium, potassium can be eaten raw, used in preparing salad, garden egg soup, stew or sauce. Recent investigations have shown that eating lots of garden egg helps lower eye pressure in persons with glaucoma and for the treatment of stomach ulcer, while the  leaves protects the body from cancer formation and controls the level of blood sugar in the system


Ingredients for Garden Egg Stew

10 Medium sized garden eggs
1 bunch of garden egg leaves (medium size)
1 medium size dried fish
1 tablespoonful crayfish
1 medium sized onion
3 large Tomatoes
Fresh pepper
Red oil
2 stock (knorr) cubes to season the food
Salt to taste
Water

Step 1: Preparation on How to Prepare Garden Egg Stew

Wash the fish in warm salted water
Remove the bones while washing and break the fish into bits
Put the fish and crayfish in a pot,
Add your stock cubes and salt to taste
Add some hot water into the pot and put the pot on the side to suck up seasonings for 10munites
Wash the garden eggs and remove the stalks
Cut the garden egg into bits (your preferred sizes)
Put the garden eggs in a different pot
Pour some hot water in the pot and put in on fire to boil for 5 minutes
After 5mins, remove the garden eggs from the fire
Sieve and reserve the stock (just in case you need to add some more water)
Peel and mash the garden egg
Chop the tomatoes and half of the onion into bits
Blend the pepper and remaining half together

Step 2: Ready to Cook How to Cook Garden Egg Sauce

Put the pot with fish on fire to boil well
Place a pot or sauce pan on fire
Add some red palm oil and allow it to heat
Add the tomato and blended pepper
Stir continuously to avoid burning or sticking to the pan for about 5 minutes
 Add your fish stock and allow to boil for 2 mins
Add the mashed Garden egg, seasoning and salt to taste
Allow to cook for another 5minutes
Bring down the pot and our soup is ready!!
You can serve this soup with rice, yam, plantain etc.
