Nsala Soup |
This type of soup is popularly referred to as white soup because it is one traditional soup prepared in Nigeria without oil. Cooking Nsala soup is very easy, in my place, after its prepared it can go with boiled yam or swallow (utara akpu/loiloi or pounded yam) but I enjoy it more with loiloi.
Note:
This soup can be prepared with any type of meat or fish, the choice is yours.
I enjoy cooking it with seafood such as snail, stock fish and dry fish. For me, what makes Nsala soup is the stock fish.
To start with you need to buy all the necessary ingredients to spice it up. The quantity of ingredients you will use depends on how much soup you intend to prepare.
Ingredients
StockSnail, goat meat intestine, Stock fish and Dry fish, Crayfish
Spices
Udah seeds, Ehuru (calabash nutmeg),uziza seeds, uziza leaves or utazzi, onion, pepper, maggi and salt to taste, two slices of yam to serve as thickner.
Steps on How To Prepare Ofe Nsala
- Wash the stock fish and soak it with warm water in the same pot you intend to cook with.
- Wash the fish with warm water and salt- the salt will help remove sand on it, remove the bones and add it to the stock fish
- Break the snails and wash them with alom to remove the slimmy substance, then rinse and put it in the pot

- Wash the intestine thoroughly and add to the snail
- Peel the yam and put it in the pot
- Wash the crayfish and blend it a bit
- Chop the ball of onion to pieces and put it in the pot
- Beat the udah a bit in a mortar, remove the seed to avoid its bitter taste and put it in the pot
- Pound the uziza seed and ehuru, add it to other ingredients in the pot
- Add some more water and put the pot on fire
- Allow it to boil for about 30 minutes
- Check if the yam has become tender, remove the yam and pound it till it’s without seed.
- Put the yam in the pot, break it into 4, cover the pot and allow the yam paste to dissolve
- Add the Uziza and pepper leave and allow it to simmer for 10 minutes
- Add salt to taste
- Add your cubes of maggi and leave it to cook for 5 minutes
- Put down you pot, Nsala soup is ready.
Your ofe nsala is now ready to be served with pounded yam, semo or akpu.
