Nigerian Foods: How to Prepare Egusi Soup (Fried Method)



The process of preparing our Nigerian dishes  are often very easy and for those of us outside the country, i know when you come into Naija you wouldn't  want to miss the taste of egusi soup merge with pounded yam. If you are married to a white woman or a lady from a different country who enjoys eating but do not know how to cook this kind of meal. then this article is for you.

Ingredients Needed 



  • Egusi
  • Usu
  • Stock fish
  • Meat
  • Dry fish
  • Crayfish
  • Ginger (gives you sweet flavour)
  • Pepper (preferably Cameroun Pepper)
  • Salt
  • Red oil
  • Onion
  • Vegetable (ugu or ukasi/affang)
  • Stock cubes



Prepare and Boil Stocks 

  • Blend your Egusi with the usu (binder) to powder
  • Pour half a liter of water in the pot
  • Wash the meat, fish and stock fish, crayfish, a little ginger and add to the water in the pot
  • Chop a medium size ball of onion, blend the crayfish and add both in the pot with the meat
  • Add your stock cubes and salt to taste
  • Wait till the stock is well cooked
  • While the meat is cooking, wash and cut your Ugu (vegetable)

Recipe For Egusi Soup 

  • Put 3 cooking spoons of oil in the pot and put the pot o fire for the oil to heat a bit
  • Add the blended Egusi, Ginger and Crayfish to fry very well.
  • Pour the boiled stock and cook for about 10 minutes
  • Leave the pot open if you like your soup thick
  • Add your blended pepper and leave to simmer for 5 minutes
  • Add your Ugu (Vegetable), add stock cube and salt to taste and leave to steam for 2 minutes.
  • Bring the pot down - Done
